Strawberry Jam

I knew I had to hurry and get strawberries when we were on our last jar of jam last week! My kids love PB&J and we go through a lot of freezer jam. Since the weather has been so hot and humid, and the strawberry crops have been spotty, I decided to skip the picking and just buy several quarts from a local Amish stand. We are set for another year of homemade strawberry freezer jam. yay! :)
Recipe for Strawberry Freezer Jam
3 Cups crushed ripe strawberries
6 Cups sugar
2 TBS. lemon juice
Box Certo (liquid fruit pectin-2 pouches)

Mix berries, sugar and lemon juice until the sugar is dissolved.
Stir Certo in quickly & thoroughly.
Pour into jars or freezer-containers, replace lids, and let sit for 24 hours
Then put into the freezer. (makes 8 half-pint (jelly) jars)

To thaw, simply put jar into the fridg the night before using.
I double this recipe for my family.
