An easy menu for me! Most of the summer, unless it is a driving rain or long hours for Andy at work, he is at the grill, starting the charcoal and marinading whatever meat we have planned for dinner. Rarely do have I have to make the whole meal in the summer months! Lately, we have been drinking lots of green tea (a change from our regular mint) and using agave nectar (rather than our cup of white sugar). We have been making a big effort to eat better and exercise more frequently as well.
These YUMMY potatoes are not banned from the menu however...I drizzle a baking dish with olive oil, chop up red potatoes, sprinkle minced garlic, basil & Parmesan over the potatoes, drizzle a little more olive oil and bake for an hour while the grill preps and Andy makes the meat. We are doing a LOT of this and we all love it! Mixing a salad or making a side dish then joining Andy & the kids outside while he grills is probably my favorite thing about summer!
